Ingredients (6 servings)

  • 2 shallots
  • 30 g Borde dried fairy ring mushrooms
  • 300 g chicken
  • 100 ml liquid cream
  • Salt/pepper
  • 6 wraps
  • 120 g ricotta cheese (or other cottage cheese)
  • Grated or shaved Parmesan cheese
  • A few salad leaves

Preparation

  1. Rehydrate the dried fairy ring mushrooms in a container of lukewarm water for at least 15 minutes. Drain, then plunge into boiling water for 1 minute. Drain again and set aside.
  2. Chop the shallots and cut the chicken into small pieces.
  3. Fry the shallots in olive oil. When they have browned, add the rehydrated fairy ring mushrooms and then the chicken. Once the chicken is cooked through, add the liquid cream and reduce for around 5 minutes.
  4. Season with salt and pepper and mix.
  5. Place ricotta cheese (approx. 20 g) in the center of each wrap. Top with the chicken and fairy ring mushrooms mixture. Sprinkle with grated Parmesan and finish with salad leaves. Close the wrap with a toothpick.
  6. Enjoy the wrap while still warm or lukewarm.
  7. Tip: add a few pan-roasted pine nuts for an even more sensational taste!
