Ingredients (4 servings)

  • 1/2 cucumber
  • 2 tomatoes
  • 1/2 red onion
  • 200 g wheat semolina
  • 175 g Borde chanterelles in vinegar
  • 1 lemon juice (45 ml)
  • 3 tablespoons olive oil
  • 1 pinch of Guérande sea salt
  • 1 tablespoon « Tabbouleh spice blend » Terre Exotique

Preparation

  1. Dice the tomatoes and cucumber.
  2. Finely chop the red onion.
  3. Place the semolina in a bowl and cover with boiling water. Leave to stand for 10 minutes, occasionally lifting the seeds with a fork to aerate them.
  4. Once the water has been completely absorbed, sprinkle the semolina with lemon juice and olive oil.
  5. Drain the chanterelles in vinegar.
  6. Add the diced tomatoes, cucumber, onion and chanterelles.
  7. Finish with a pinch of sea salt and the tabbouleh spice blend.
  8. Mix all the ingredients well and leave the tabbouleh to cool.
  9. Serve cold as a starter or main course.
