Ingredients (4 servings)
- 1/2 cucumber
- 2 tomatoes
- 1/2 red onion
- 200 g wheat semolina
- 175 g Borde chanterelles in vinegar
- 1 lemon juice (45 ml)
- 3 tablespoons olive oil
- 1 pinch of Guérande sea salt
- 1 tablespoon « Tabbouleh spice blend » Terre Exotique
Preparation
- Dice the tomatoes and cucumber.
- Finely chop the red onion.
- Place the semolina in a bowl and cover with boiling water. Leave to stand for 10 minutes, occasionally lifting the seeds with a fork to aerate them.
- Once the water has been completely absorbed, sprinkle the semolina with lemon juice and olive oil.
- Drain the chanterelles in vinegar.
- Add the diced tomatoes, cucumber, onion and chanterelles.
- Finish with a pinch of sea salt and the tabbouleh spice blend.
- Mix all the ingredients well and leave the tabbouleh to cool.
- Serve cold as a starter or main course.
