Ingredients (4 servings)
- 400 g potatoes
- 20 cl milk
- 120 g single cream
- 100 g butter
- 40 g Borde Tartufata sauce
- Chives
- Some hazelnuts
- Borde black truffle olive oil
- Salt and pepper
Preparation
- Cover and cook the potatoes for 30 minutes.
- Bring the milk and cream to the boil.
- Peel the potatoes.
- Crush them with a whisk and add the milk and cream mixture a little at a time, adding the butter at the end.
- Add the Tartufata sauce and mix well.
- Arrange the mashed potatoes on plates and add chopped chives, hazelnut pieces (or grated hazelnuts) and a drizzle of truffle olive oil.
- Tip: You can roast the hazelnuts to give them a stronger flavour and add slices of truffle to garnish.
